Chef Frustrations: Pesto Medianoche

Hi everyone!  How's 2012 going so far? I had fun preparing new year's eve dinner as much as our Christmas one.

Theme for the dinner is pesto!  This is my first time to prepare this recipe but it was actually my dad who suggested we try it out.  

Here are the ingredients you'll need:

And of course, olive oil! :)
It's easy to cook!

1. Saute garlic in about 3 tablespoons of olive oil.
2. Add the tuna (make sure to drain it's oil first).  I used 3 cans.
3. Add the mushrooms.  
4. Mix in about 1/4 cup of pesto sauce.  Season with salt and pepper.


5. Top on some angel hair pasta mixed with a bit of olive oil as well.


Perfect combination with chicken fingers marinated in the same pesto sauce.


We also ordered Pizza Hut's Roast Beef Tuscani.  Love it!!!
